Jerrold Brooks was recently appointed Executive Chef in April 2016 at San Manuel Casino.
Chef Brooks’ culinary career and passion for food began in his hometown, Vicksburg, MS. Chef Brooks was a local football star who would have loved to play pro, but was more focused on becoming a physical therapist.
While playing football at Alcorn State University, Chef Brooks worked in the kitchen at Harrah’s Casino where he cultivated a love for food. He quickly researched his career options and transferred to the culinary program at Hinds Community College. While attending Hinds, he was exposed to high profile food events being held at the Governor’s Mansion and high end restaurants in Jackson, MS. Through dedication and hard work he graduated and became sous chef at Harrah’s steakhouse and later assistant executive chef for the property.
Chef Brooks got a taste of the Big Easy as restaurant chef of The Manor Room at Harrah’s, New Orleans. To expand his culinary experience, he accepted a chef position in their award winning buffet.
His culinary casino career took him to Par-a-dice Casino in Peoria, IL, Sam’s Town Casino in Shreveport, LA and then to Sam’s Town, Tunica, MS. At Sam’s Town, Tunica, Chef Brooks became active in the community. He consistently placed in the Memphis Kosher BBQ competition, held cooking demonstrations at area festivals and made numerous TV appearances. Under his direction, Sam’s Town was voted best buffet. He also had a passion for inspiring young chefs and dedicated many hours to the Memphis public school vocational culinary program.
Chef Brooks has traveled all over the country perfecting his culinary skills and has brought those experiences back to Mississippi. As head of the culinary team, he oversees operations in three restaurants, a team member dining room, meeting facilities and Star Club Lounge.
In his role as Executive Chef, Brooks will bring his culinary knowledge, developed over nearly 20 years and multiple casino properties, to further enhance the cuisine of San Manuel’s food and beverage outlets.
